
Turkey rice soup with carrots, mushrooms, and spinach
Ingredients:
3 c. water
1 can chicken broth
1 carrot, chopped
1 pkg. chopped mushrooms
1 can cream of chicken soup
2/3 c. uncooked rice, rinsed
1 tsp. thyme
3 c. cooked turkey, chopped
2 c. shredded fresh spinach
kosher salt
1 tsp. lemon pepper
Preparation:
Combine water, broth, mushrooms, cream of chicken soup, carrots, rice and seasonings (except salt) in crockpot. Cook on low for 7-8 hours or high for 3 to 4 hours. Salt to taste. Before serving, stir in turkey and spinach just long enough for the turkey to absorb all the broth and the spinach to wilt a bit. Serve with garlic bread or crostini to dip or act as a spoon! YEAH!!!
