Baked Apple with Cranberry Sauce

Category: Fruit, Breakfast | Difficulty: Easy

Apples and cranberries in my book go together, they can both be sweet and tart. I played around last year with an apple cranberry sauce for Thanksgiving that I truly liked so I decided to try this recipe since I just go nuts for baked apples!

Apples are even good to use in other dishes like in chicken. I also like to make a hash with sliced apples, potatoes and onions.

Ingredients:
3 medium apples (ex., Rome or good baking apples)
1 can cranberry sauce
1 tbsp. lemon juice
1/8 tsp. ground ginger
3 tbsp. butter

Preparation:
Preheat the oven to 350 degrees. Cut the apples in half and take out the seeds in the middle. By taking out the seeds, each apple half should look like a bowl. Arrange the apples in a 9 x 13 inch baking dish. Then, in a bowl, mix together the cranberry sauce, lemon juice, and ginger. Spoon this mixture over the apples. Put some of the butter on the center of each apple slice. Put the apples in the oven and bake for 30 minutes. After 30 minutes, take the baking dish out of the oven and let it cool slightly.

YUMMY! Makes a good breakfast idea too!
