My mom would make this dish for me when I was very young and always around the holidays. Though I wasn't big on veggies back then, nobody could stop me from that bowl of green beans and potatoes and I mean nobody! I adore green beans and I make them in all kinds of dishes. Well this week's soup for Deb's Souper Sunday has to be my beloved green bean soup and it is so easy to make. Plus, for my best friend Kassie it's a vegetarian dish which I know will delight her!

Every time I make this soup, I think about my mommy. There are just so many wonderful memories and I think that's why I've always loved cooking. I could have the worst day and all I have to do is go to the kitchen and begin prepping and preparing a meal, even a panini and a smile comes instantly across my face. My worries seem far from me. Something about it just sooths my soul and I wish more people would get more into cooking. It's therapeutic especially since you get to control what goes in it. How can anyone not like that? I'm aware of how much salt I use, what herbs I put in and how much and I get to taste each layer of flavor. Afterwards, I always serve myself a little just to be sure I've seasoned it enough. I hate bland food. I said, "I HATE BLAND FOOD." I don't care what it is, it has to have some flavor or it'll just sit in the bowl!!

Now, where my grandma came from, Tuskegee Alabama, she'd make this dish with ham hocks. I grew up eating it that way. But, I've cut out a lot of pork from my diet except for bacon...that's another story...so I omitted that. But, if you like to make it with the ham hocks, go right ahead. Also, I'm keeping this vegetarian so no meat!!
Ingredients:
1 bag of frozen green beans
1 small vidalia, finely chopped
3 or 4 large potatoes, diced
2 small carrots, chopped
2 cans of vegetable stock (enough to cover ingredients)
EVOO
lemon pepper
kosher salt
dry herbs (any kind you like)
Preparation:
In a large pot, coat the bottom with a little oil. Then saute the onions until translucent. Pour in stock. Add carrots, potatoes, and green beans. Cook until veggies are soft and a fork can go through the potatoes easily, about 1 hour for my stove. Be sure to salt and pepper to taste. Add dry herbs. Serve hot with cornbread!

I'm the same way when i cook. I forget all my worries when I'm in the kitchen putting together something to eat even if was just a PB sandwich.

Luckily this soup is make-able to me like I was wishing in your previous post haha. Sounds delish. We have a green bean dish, but I never knew you could use the veggie in so many ways. In the US I see Mexican cuisine uses it... my Cali friends toss it into salads, stews... eat like a snack even! That comes down to what I enjoy about us sharing food muse. Learning a lot :)
Also, I enjoyed stopping by for this soup you associate with memories... makes it meaningful and tastier to think of.
Cooking just makes all my stress disappear. And then there's the eating, that makes me happy! This is a delicious vegetarian soup! Not bland at all!!

looks like i'm gonna have a bumper crop of beans this year...last year i canned 65 quarts AFTER we ate 'em fresh till they came out of our ears lol and i'm thinking this year is going to surpass that.......soooooooooo....i'm gonna need all the green bean recipes i can lay my hands on. this one looks like a keeper. of course, to keep it from being tooooo healthy, i'd have to float a few chunks of ham in the broth! food for the gods!

Sounds like a great way to use up all those frozen beans from last summer's bumper crop!
