Asparagus Soup; Memorial Day Souper Sunday

Category: soups and stews | Difficulty: easy

This is a quick and easy healthy way to eat up the asparagus, make a soup out of it! I know DebinHawaii would love this so that's why I'll submit it for this Memorial Day weekend for her Souper Sunday!

Ingredients:
3 bunches of asparagus
1 quart of cream or milk
1 tbsp. of butter
1/2 tbsp. flour

Preparation:
Boil the asparagus in 1 quart salt water till tender. Drain water off, then add cream. Rub butter and flour together and add before taking from the stove. Add salt and pepper to taste. Serve with toasted bread or croutons.

Join Deb's Souper Sunday with a soup of your own!
