Brown Rice Salad Served w/Salmon

This is a simple dish to make and so good, I like rice with salmon but also you gotta like the presentation; you guys know how much I like my plate to look like a painting when I serve it. That's the fun part for me is platting up!



Looks healthy doesn't it? Now to grill the salmon, click here for that recipe. Here's the brown rice recipe:

Ingredients:
1 c. Basmati rice (white or brown)
1 lg. onion (cut in 1/2 inch pieces)
3 tbsp. butter, butter or olive oil
1 tsp. salt

Preparation:
Fry onion slowly until dark brown. Add washed rice and fry for a few minutes mixing well. Add salt and water to cover 1/2 inch (approximately 2 cups). Bring to rolling boil. Cover, lower heat to lowest and cook until you hear it begin to fry on bottom and grains "stand at attention". Serve immediately.

Another variation: After onions are fried to translucent, add 1 cup finely chopped mushrooms and follow the instructions above!
