
For my friends Amanda and Kassie, this dish is for you guys! I know they'd love both veggies in here! But besides that, it is filling and makes a great side dish to anything or it can be a meal of its own. Casseroles take me home to my mom's kitchen around the holidays. It seemed at that time of year, we ate more casserole dishes and I love the idea of mixing ingredients together and then smelling them bake in the oven. Oh....it just makes me feel warm and safe inside. I think I need that feeling a lot more now that she's not with me anymore and that the world now is so different. I think we all need to feel safe and comforted and casserole dishes do that for me.
Again, very easy to make, ingredients easy to get and your kitchen will have the aroma for days so you can't ask for anything better than that, right?
Ingredients:
2 lg. zucchini
2-3 lg. summer squash
1 1/2 to 2 c. Italian bread crumbs
1 c. grated Parmesan cheese, or to taste
NOTE: Left out an important ingredient, OLIVE OIL!!, when I typed this recipe and thanks to one of my readers for pointing it out. So, what you want to do first is drizzle some olive oil on the bottom of your baking dish. And then layer the dish as described below.
Preparation:
Peel and slice squash. Place in ungreased 9 x 12 inch pan. One layer of zucchini, sprinkle with bread crumbs and cheese. One layer of summer squash, sprinkle with bread crumbs and cheese.
Continue to layer until squash is gone. Top with remaining crumbs and cheese. Bake at 350 degrees for 30 minutes, or until squash is done. You can use tomatoes too for this dish if desired. If you want to use them, top the casserole with the tomatoes and then bake the casserole.
Enjoy it with some crusty Italian bread, put some garlic spread on them and then bake it after the casserole comes out until the spread melts and the bread browns slightly. Serve hot on the side of the casserole. Grab your blanket and a book or movie and wrap up in it and enjoy each bite and while you're enjoying your book or movie, let your mind relax on something happy, I bet you'll sleep good that night!!!! :D

This sounds yummy...a real comfort dish. Great around the holidays or anytime...and you know what I really like about it? Its not greasy! Lots of veggie casseroles end up greasy. This sound great!

ReplyDeleteI am wondering, the recipe says to peel the squash, but the picture shows it unpeeled. (I hate peeling squash) Does it matter?
