Fish to me makes such a great meal to eat in these hot Florida summers and this summer it has been sooo hot, just got my electric bill and it's over $300! I bout freaked out when I saw it and then my blood began to boil - but to calm me down a wonderful light meal does the trick! I could have fried the fish but I opted to bake it instead. I don't want to deal with oil and and what not and I love baked fish and chicken anyway. Then to serve it on rocket lettuce makes it look gourmet but taste like it too.
The blend of flavors is nice and what makes the fish so good is the mixture of lemon butter. My mom taught me this when I was really young. She loved lemon butter on top of her perch, catfish or whatever fish she was cooking. I was addicted too. Can you believe when she bought those frozen fish sticks, she'd make the lemon butter in the microwave and pour it over the sticks - as a little kid I was in Heaven! I don't eat the fish sticks anymore, but I still love the lemon butter sauce, I've even used it on toast!
You can certainly use whatever lettuce is on hand or your favorite, I also think mixed greens or baby spinach would make a good bed for the fish to sit on.
Ingredients:
1 to 1-1/4 lbs. sea bass fillets
2 tbsp. butter, melted
2 tbsp. lemon juice
1/2 tsp. kosher salt
1/4 tsp. lemon pepper
1/4 tsp. dried dillweed, optional
2 c. crushed corn flakes
Lettuce of your choice
Preparation:
Grease a 13x9-inch baking dish. If fish fillets are large, cut into serving-size portions. Combine butter and lemon juice; set aside. Mix salt, pepper, and dillweed. Dip each piece of fish in butter and lemon mixture. Sprinkle salt and dill mixture over each side of fish. Coat with the corn flake crumbs.
Place fish fillets in prepared pan and bake in a 350 degree oven until fish flakes easily with a fork, 20 to 30 minutes, depending on thickness of the fish fillets. Plate with lettuce and then top with fish. Serve alongside some veggies. Serves 4.
Now about this here light bill....man how am I going to pay that?! Oh well! Perhaps I need another helping and I'll think about it tomorrow!

Yep, this is "lovely" alright! I love baked fish, especially sea bass and halibut...and especially with corn flake coating!! Love the recipe...that lemon sauce sounds amazing and I bet would be great over prawns too! Or as a dipping sauce for lobster! (not that I get lobster often...chaching!!)
The electric bill...ugh. Sorry about that! Hugs!
