Fettuccini for Dinner Tonite



So I looked in my cabinet for something to cook tonite and saw three boxes of fettuccini. Now hubby loves this long thick looking pasta but he really likes the white sauces and I'm not such a big fan of them so since I've got all this fettuccini, why fix just one dish? So I decided maybe two meals instead - I'll fix him fettuccini carbonara and for me - this spicy tomato cream sauce! YUMMO!

Ingredients:
1 can sliced tomatoes/Italian herbs, drained (I like Contadina)
1/4 tsp. kosher salt
9 oz. fettuccini pasta
1/3 c. heavy whipping cream
fresh grated parmesan cheese
1 tbsp. butter
1/8 tsp. red pepper flakes
1/4 c. minced onions
1/4 c. sliced basil

Preparation:
Melt the butter in a large skillet over medium to high heat. Then, cook onion and pepper flakes for 5 minutes or until tender. Stir in tomatoes & salt and cook over high heat until almost dry for 8-10 minutes. Now, stir in the cream and bring to a boil for 1 minute.

Meanwhile, cook the fettuccini till al dente, drain pasta and toss with sauce, then stir in basil. Top with parmesan cheese and serve (I love how it melts on the pasta). I like a little extra basil on top!!!!


Fettuccini Carbonara



I've always thought that white sauces in pasta makes an elegant looking meal. Not sure why I favor the red sauces more though, but anyways both hubby and I will be happy tonite!

Ingredients:
1 lb. fettuccini, cooked al dente
5 strips bacon (I love turkey flavor)
1 med. vidalia onion
1/2 stick butter
1 pt. heavy cream
1/2 c. milk
2 egg yolks, beaten
1/2 c. grated cheese
Parsley to taste (dry or fresh)
Kosher salt to taste
Lemon pepper to taste

Preparation:
Fry bacon. Cut into small pieces. Discard bacon drippings. Melt butter in pan, add chopped onion and bacon.

Saute 10 minutes on medium heat. Add heavy cream, milk, grated cheese, parsley, salt and pepper. Simmer 20 minutes on low heat. Shut off heat. Wait 5 minutes. Stir in egg yolks. Stir sauce into cooked fettuccini and serve.

Optional: if you want, add 1/2 cup of frozen peas in with the onion and bacon and then follow the remainder of the recipe!

  2. Oh, Kim, these both look great! My son would love the Carbonara....and the spicy tomato sauce sounds like it has some good "kick"! I will be trying both of them soon.

  3. OH girl! Both of these sound so good! I'm usually more for the tomato sauces too, but both sound incredible. Jens would love the bacon in the carbonara! haha! Yummy post!

    Hubby loves bacon bits in his sauce too! He can unfortunately eat a whole plate of this at one time, so I have to be sure to hide it and bring it out the next day for him! hee hee

    Hubby does love the 2nd the best, he loves the white sauces and I love the red ones! Nice to get what one wants every now and again! LOL
