It's that time of the year for me when I start getting that "baking" craving! I love cookies, cakes, tarts, cobblers, pies, whatever sweet thing I can stuff in my mouth, I'm takin' the plunge! I've been good this year not overindulging on desserts so I'm proud of myself, but now is the real challenge for me - I have to get through the rest of this year and not overdo the sweets! So, my goal is to treat myself here and there and share the rest with friends and neighbors! Otherwise, I'll sit in front of the TV and eat 'em all up myself and then I'll hate myself when that dress I want to wear for the church Christmas party won't fit!
Today's little treat is one of my favorite combinations: peanut butter and chocolate! And these cookies are very easy to bake, won't take a lot of time, and who doesn't love making cookie dough? I can't imagine anything more fun, makes me feel like a kid again! And, I think the kids would love to play with the dough shaping the cookies. What a lovely smell the kitchen will have for days!
Ingredients:
1-1/4 c. flour
1/2 tsp. salt
1/2 c. creamy peanut butter
1/2 c. granulated sugar
1/2 tsp. vanilla
2 tsp. baking powder
1/2 c. shortening
1/2 c. brown sugar
1 large egg
1 (6 oz.) pkg. chocolate chips
Preparation:
Mix all ingredients together until well blended.
Roll dough into 1-inch balls and bake on ungreased cookie sheet in 375 degree oven about 10 minutes or until lightly brown.
